Due to the high altitudes and harsh winters of Nagano Prefecture, soba has long been cultivated as it is a robust crop that can withstand the elements.<\/p>\n<img loading=\"lazy\" class=\"aligncenter size-large wp-image-16975\" src=\"https:\/\/i0.wp.com\/visitmatsumoto.com\/wp-content\/uploads\/2017\/10\/20171008_141544-533x800.jpg?resize=533%2C800&#038;ssl=1\" alt=\"20171008_141544\" width=\"533\" height=\"800\" data-recalc-dims=\"1\" \/>\n<p>Since the festival was held on the outer edge of Matsumoto Castle, you could also enjoy the view of the historic wooden structure while browsing the various stalls. Soba is served both hot and cold.\u00a0 While Nagano Prefecture is especially famous for its soba, other vendors representing prefectures such as Hokkaido, Fukui, and Fukushima allowed visitors opportunities to savor their\u00a0spins on the dish.<\/p>\n<p>&nbsp;<\/p>\n<figure style=\"width: 590px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" class=\"aligncenter size-large wp-image-16979\" src=\"https:\/\/i1.wp.com\/visitmatsumoto.com\/wp-content\/uploads\/2017\/10\/20171008_145706-590x361.jpg?resize=590%2C361&#038;ssl=1\" alt=\"20171008_145706\" width=\"590\" height=\"361\" data-recalc-dims=\"1\" \/><figcaption class=\"wp-caption-text\"><br \/>Soba noodles served cold in a tsuyu broth and topped with grated radish, chopped onions, and bonito flakes.<\/figcaption><\/figure>\n<img loading=\"lazy\" class=\"aligncenter size-large wp-image-16977\" src=\"https:\/\/i2.wp.com\/visitmatsumoto.com\/wp-content\/uploads\/2017\/10\/20171008_141920-533x800.jpg?resize=533%2C800&#038;ssl=1\" alt=\"20171008_141920\" width=\"533\" height=\"800\" data-recalc-dims=\"1\" \/>\n<p>Rows of food stalls offered freshly made soba and also dried soba to take home. Local fruits, vegetables, crafts, and more were also being sold, including apples, another Nagano specialty that is now in season.
