Since these shops usually aren&#8217;t trying to cater to the troves of tourists coming to the city, you can rest assured you&#8217;ll have an authentic experience.<\/p>\n<p>The first place I want to talk about is Inakaya (\u7530\u820e\u5c4b), a soba shop located straight east from Matsumoto Castle on the way to the Utsukushigahara Onsen hot springs area and not <em>too, too<\/em> far off the beaten path (see below for access info).<\/p>\n<figure id=\"attachment_18254\" aria-describedby=\"caption-attachment-18254\" style=\"width: 590px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" src=\"https:\/\/i1.wp.com\/visitmatsumoto.com\/wp-content\/uploads\/2018\/02\/25700887698_70975b0d31_z-590x443.jpg?resize=590%2C443&#038;ssl=1\" alt=\"Inakaya&#039;s entrance \" width=\"590\" height=\"443\" class=\"size-large wp-image-18254\" data-recalc-dims=\"1\" \/><figcaption id=\"caption-attachment-18254\" class=\"wp-caption-text\">Inakaya&#8217;s entrance<\/figcaption><\/figure>\n<p>I&#8217;m a little partial to Inakaya because it&#8217;s the first soba shop I visited when I moved to Matsumoto, but they definitely serve some high quality soba! They make their soba noodles by hand using soba flour from the Kaida Highland area in Kiso, Nagano and you can see the soba noodle making room on your right when you walk in the door.<\/p>\n<p>Inakaya serves a variety of both chilled soba and hot soba in soup, and like many classic soba shops, you can get a side of crispy tempura on the side. The simplest way to enjoy the soba is the plain chilled soba which has a great texture and delicious, subtle flavor. It gets dipped into a concentrated dipping soup (<em>tsuyu<\/em>), which after you&#8217;re done eating, gets diluted with the thick water from boiling the noodles so you can drink it like soup. Another, more luxurious option is to get the chilled soba with the duck dipping soup, which includes a small, but tasty piece of roast duck.<\/p>\n<figure id=\"attachment_18255\" aria-describedby=\"caption-attachment-18255\" style=\"width: 590px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" src=\"https:\/\/i2.wp.com\/visitmatsumoto.com\/wp-content\/uploads\/2018\/02\/24703356167_e265e13f4f_z-590x443.jpg?resize=590%2C443&#038;ssl=1\" alt=\"Chilled soba with duck dipping soup\" width=\"590\" height=\"443\" class=\"size-large wp-image-18255\" data-recalc-dims=\"1\" \/><figcaption id=\"caption-attachment-18255\" class=\"wp-caption-text\">Chilled soba with duck dipping soup<\/figcaption><\/figure>\n<p>There is also a hot version of the duck soba noodles:<\/p>\n<figure id=\"attachment_18257\" aria-describedby=\"caption-attachment-18257\" style=\"width: 590px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" src=\"https:\/\/i0.wp.com\/visitmatsumoto.com\/wp-content\/uploads\/2018\/02\/39570915971_2f404127d5_z-590x443.jpg?resize=590%2C443&#038;ssl=1\" alt=\"Hot soba noodles with duck\" width=\"590\" height=\"443\" class=\"size-large wp-image-18257\" data-recalc-dims=\"1\" \/><figcaption id=\"caption-attachment-18257\" class=\"wp-caption-text\">Hot soba noodles with duck<\/figcaption><\/figure>\n<p>If you&#8217;re a fan of tofu (in particular, fried tofu), then you&#8217;ll love the hot <em>tanuki<\/em> soba (yes, that would be the same tanuki from Super Mario!) which features a big, fat, juicy piece of fried tofu in the soup. Similarly the hot <em>kizami<\/em> soba has slices of fried tofu with green onion in the soup.<\/p>\n<figure id=\"attachment_18258\" aria-describedby=\"caption-attachment-18258\" style=\"width: 590px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" src=\"https:\/\/i2.wp.com\/visitmatsumoto.com\/wp-content\/uploads\/2018\/02\/38862334784_040c760932_z-590x443.jpg?resize=590%2C443&#038;ssl=1\" alt=\"Tanuki soba noodles\" width=\"590\" height=\"443\" class=\"size-large wp-image-18258\" data-recalc-dims=\"1\" \/><figcaption id=\"caption-attachment-18258\" class=\"wp-caption-text\">Tanuki soba noodles<\/figcaption><\/figure>\n<figure id=\"attachment_18259\" aria-describedby=\"caption-attachment-18259\" style=\"width: 590px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" src=\"https:\/\/i2.wp.com\/visitmatsumoto.com\/wp-content\/uploads\/2018\/02\/39570914061_b3ba981f09_z-590x443.jpg?resize=590%2C443&#038;ssl=1\" alt=\"Kizami soba noodles\" width=\"590\" height=\"443\" class=\"size-large wp-image-18259\" data-recalc-dims=\"1\" \/><figcaption id=\"caption-attachment-18259\" class=\"wp-caption-text\">Kizami soba noodles<\/figcaption><\/figure>\n<p>Other types of soba are <em>sansai<\/em> soba noodles which are served with wild mountain herbs and plants, soba with grated Japanese yam, and tempura soba.<\/p>\n<p>The shop itself has a cozy, country-style atmosphere with a wood-burning stove in the middle of the restaurant and old Japanese folk masks hanging on the walls. From Matsumoto Station it&#8217;s 2.7 kilometers, so it&#8217;ll take a few more minutes from there.
